So there I am! Living it up in my 30-somethings with a ridiculously hot hubby, 3 seriously outgoing matter-of-fact smart beautiful kids, a cat named Roxii that just won't quit, 2 chihuahuas named Lokii (what was I thinking) and Brodii who don't understand the concept of pee outside.

I'm a strongly opinionated, outspoken, inappropriate and absolutely unapologetic chick going through this thing called life and trying to do it with my sanity intact. So far, this isn't working out so well!

Keto Journey - Day 1

Ok so "Day 1" is complete. It's 6:40pm but I know that I am full and full for the night. I actually almost struggled to eat to get in what I needed to.

The day started with what is called "Bullet Proof Coffee" or "Keto Coffee" for short. I have to say it was absolutely disgusting. Ok, maybe not disgusting, but definitely going to take some getting used to. I mean, the idea of a morning coffee (or tea as well) is my go to because it's quick and easy and I'm out the door to work. If in the future I can manage to make it taste better by getting feedback from others that drink it, it will be a good day. This keto coffee kept me feeling full right through until 2:30pm or so.

Lunch crept up faster than I thought and so I went for finger foods. Again with the job that I have I want something easy to throw together but something that doesn't require heating up. I had some kolbassa, medium brick cheese and celery sticks (my fav veg). It was uneventful and again I was pretty full.

Around 6:00pm, although not really hungry, I figured it was time to at least get it ready. Once I started to cook up the stir fry steak strips I thought, yup, I can eat this no problem. I tossed in some broccoli and voila. Sided it with more celery and a piece of cheese and I'm feeling like a glutton on the couch at the moment. Day is DONE. I'm done. It's all done.

Well, except water. BUT for those that know me you know damn well that I struggle to get enough water into me. I've always been that way to the point I used to actually gag if I tried drinking it. You will be proud to know that I'm about 12oz short of 54. Of course I still have another 2 jugs to drink but it is going to be in small steps.

Overall, today was a success. Not as hard as I thought it would be. No side effects that I can see/feel. At this rate definitely sustainable.
